Garlic-free, egg-free creamy lime dressing

This is another quick-and-simple recipe that will make you a fan of homemade dressings.

The original goes on a Santa Fe salad (I used corn, black beans, red onion and green chilies), but it works well on a green salad as well if you want the taste without the extra carbs.

It doesn’t make much, though. You’d have to at least double it if used for a dressing at family dinner.

  • 1c. minced fresh cilantro
  • 1/4 c. sour cream — yogurt will work, too
  • 2 tbl lime juice — bottled is fine, though fresh is better
  • 2 tbl balsamic vinegar
  • 1 1/2 tsp ground cumin
  • 1/4 tsp. salt
  • Dash of cayenne pepper

Combine and whisk.
