Garlic-free, egg-free creamy lime dressing
This is another quick-and-simple recipe that will make you a fan of homemade dressings.
The original goes on a Santa Fe salad (I used corn, black beans, red onion and green chilies), but it works well on a green salad as well if you want the taste without the extra carbs.
It doesn’t make much, though. You’d have to at least double it if used for a dressing at family dinner.
- 1c. minced fresh cilantro
- 1/4 c. sour cream -- yogurt will work, too
- 2 tbl lime juice -- bottled is fine, though fresh is better
- 2 tbl balsamic vinegar
- 1 1/2 tsp ground cumin
- 1/4 tsp. salt
- Dash of cayenne pepper
Combine and whisk.
